It seems cookies have been around in some form or other since 7th Century, Persia. We, here in America, began calling this remarkable little cake a 'cooky' after the Dutch settlers arrived. I feel, all things considered, I'd be remiss in excluding these wonderful hand treats form my bakery menu.
